Noilly Prat Dry Vermouth is an established vermouth whose production process has remained virtually unchanged since the 1850s. This vermouth is made exclusively from white grape varieties, especially Picpoul de Pinet and Clairette, grown in the Marseille region. These grapes produce light, fruity wines which are aged in Canadian oak barrels, giving them a unique character. For eight months, the wine is kept in these large barrels, where it absorbs the wood flavor and begins its transformation. It is then transferred to smaller oak barrels for a year, where it is exposed to the climatic conditions of the region, allowing the wine to evolve slowly. This process results in a dry, full-bodied vermouth with an amber color, comparable to Madeira and Sherry, where 6% to 8% of its volume is lost to evaporation, the well-known "angel's share."
