This Extra Virgin Olive Oil is characterized primarily by four factors: - An intense yellow color with some traces of green. - A sweet and flat taste, without the characteristic spiciness or bitterness of oils from southern Spain; therefore, it achieves a very pleasant palate that makes tasting these Virgins a real pleasure. - An aroma of very dense ripe fruit. - A very high content of fatty acids, which make these Virgins one of the most perfect of all those obtained in the different oil-producing areas of Spain. It should be noted that, in the region of La Sierra de Gata, most of the olives are destined for direct consumption, that is, for table olives, which are well-known throughout Spain (the famous "Manzanilla Cacereña" olives). They are highly appreciated for their texture and flavor, which make them very pleasant to the palate. The oil is obtained from olives that, due to their small size, cannot be used for direct consumption, so it can be deduced that the Extra Virgin oil obtained from these fruits retains all of its most characteristic virtues.
