AROMA: Very intense fruity aroma of green olives and very complex, with green notes of apple, grass, stems, alloza, and tomato plant.
FLAVOR: In the mouth, it is initially sweet, moderately bitter, and slightly spicy. Very well-balanced.
This extra virgin olive oil shows us an aroma of fresh grass, tomato plant, and artichoke that reminds us of the extensive olive fields of the upper Guadalquivir basin. It transmits a sense of peace and awakens a unique feeling in us. First night of harvest. This year's harvest took place in late October. Since October is a month of high daytime temperatures, which in many cases reach up to 30 degrees, the harvest is carried out at night, ensuring that the temperature from the olive's extraction to the obtaining of its elixir remains constantly below 20 degrees. The harvested olives go through a selection process, in which those that do not meet the established requirements are discarded.
