Production and ageing: These wines come from extremely fine palomino musts, initially fortified to 15% vol. and identified with a "palo" or oblique line. At the end of the sobretabla phase, tasters' recognition of certain very specific characteristics in some of the casks where they have been aged under flor veil, will determine their classification as potential Palo Cortado wines (illustrated in casks with a horizontal line cutting the original "palo"). Naturally aged in American oak casks (600 liters capacity) without added yeasts, rested for 6 months on lees. A first year of biological ageing and subsequent oxidative ageing in American oak casks.
