100% Sauvignon Blanc.
We select the best Sauvignon Blanc grapes from our vineyards and harvest them at night to take advantage of the coolness and prevent oxidation during the harvest until they reach the winery. We have hopper trailers that go directly from the vineyard to the winery. The harvest is collected all night at the winery and we proceed to destem and crush. We apply liquid CO2 at -30°C to cool the harvest to 10°C in line and prevent oxidation in the must. We macerate for 12 hours at a temperature of 10°C and gently press with a pneumatic press. Only the clean must is taken to ferment at a temperature of 16°C by adding our selection of yeast.
TASTING NOTES:Color: Golden yellow with greenish reflections.
Aroma: High intensity, with memories of ripe tropical fruit over a citrus background and a slightly milky finish.
Flavor: Good mouthfeel, fruity, refreshing, with persistence and lively acidity.
SERVICE TEMPERATURE: 6-8°C.
PAIRING: Ideal for pairing with appetizers, fish and seafood rice dishes.
