This project seeks to revive the winemaking tradition of the Cistercian order, originally from Burgundy, adapting it to the landscape and native varieties of Tarragona. The harvest is done manually, carefully selecting the bunches. Fermentation occurs in cement tanks with natural yeasts, showcasing its authentic character. The wine is then aged for approximately 12 months in large oak foudres and cement tanks, a process that adds structure without hiding the identity of the varieties or the expression of the terroir. Upon serving, it displays an appealing bright cherry red color with violet reflections.
