Change of Tercio is an exceptional red wine representing the best of the Bobal variety, a product of the Gallina de Piel project. This wine results from careful selection of grapes from old vineyards situated at approximately 700 meters altitude. The production begins with spontaneous fermentation, aimed at highlighting the distinctive characteristics of this variety. It is then aged for a few months in oak barrels and concrete tanks, preserving the purity and freshness of the fruit. Visually, Change of Tercio presents an intense cherry color with violet edges, appealing and vibrant. On the nose, it stands out for its expressiveness, with notes of ripe black fruits like blueberries and plums, complemented by hints of Mediterranean herbs and a characteristic backdrop of black pepper and dry earth. On the palate, this wine is meaty and has considerable volume, yet its vibrant acidity makes it particularly fluid and pleasant. The tannins are firm and well-polished, leaving a long finish with notable personality. It is undoubtedly a choice that will not disappoint red wine lovers.
