Gaba do Xil Mencía is a red wine belonging to the D.O. Valdeorras, produced by the Compañía de Vinos de Telmo Rodríguez. This mono-varietal of Mencía comes from vineyards located at altitude, with soils rich in clay, slate, and granite. The philosophy of minimal intervention guides the entire creation process of this wine, which undergoes fermentation with indigenous yeasts and is aged in stainless steel tanks for 12 months, without the use of wood, to preserve the purity of the grape and its Atlantic character. It presents a cherry red color with violet reflections and a fragrant nose with notes of cherries, raspberries, and violets over a mineral background. On the palate, it is fresh, light, and smooth, with vibrant acidity. This wine is perfect for pairing with dishes like Galician octopus, meat risottos, or grilled white meats.
