Mas Escorpí Savinat is a white wine made from Sauvignon Blanc, sourced from the Mas Escorpí estate in the Penedès region. This wine is produced following strict biodynamic criteria, reflecting a commitment to sustainability and quality. The harvest is done manually, ensuring that only the best grapes are selected for production. Once in the winery, the grapes are handled with utmost care: they are pressed whole and the must is clarified through a 12-hour decantation. The fermentation of the wine takes place in 300-liter French oak barrels, which have a fine grain and light toast. The process involves constant interaction with the lees through bâtonnage, contributing to the creation of a wine with notable complexity and balance. One-third of the barrels used are new, adding fresh and vibrant nuances to the wine. Fermentation is carried out at controlled temperatures between 16 and 18°C, favoring the development of fresh and fruity aromas. The result is a wine characterized by its aromatic intensity and elegance on the palate. With an outstanding balance between fruity notes and subtle influences from aging, Mas Escorpí Savinat is ideal for pairing with a wide variety of dishes, from seafood to more elaborate meals.
