High-end white wine produced by Bodega Parató, conceived as a tribute to the flagship variety of Penedès: Xarel·lo. This single varietal comes from the best plots of the estate in El Pla del Penedès, where strict organic viticulture is practiced. Its name, "Tres x Tres", refers to its particular method of production and aging that seeks the maximum expression of the terroir.
It is characterized by a fermentation and subsequent aging of 9 months on its lees in French oak barrels. This "battonage" process adds a creamy texture, volume on the palate, and superior aromatic complexity, perfectly integrating the fruit with the noble notes of wood.
Bright golden yellow in color. On the nose, it is intense and elegant, with aromas of ripe stone fruit (peach, loquat), notes of fennel, toasted nuts, and a background of vanilla and smokiness. On the palate, it is powerful, glyceric, and very structured, maintaining a vibrant acidity that gives it freshness and great aging potential. Ideal with baked fish, soupy rice dishes, white meats in sauce, aged cheeses, and elaborate Mediterranean cuisine dishes.
