The grapes come from a trusted producer, whose vines are located very close to a vineyard owned by the winery.The grapes are hand-picked into small 15 kg boxes. After spending 24 hours in a cold chamber, the grapes are destemmed and placed in a concrete tank to begin spontaneous alcoholic fermentation with the native yeast, accompanied by light manual punching down every day.
