Tomàs Cusiné Pell de Llop is an organic and vegan white wine, made exclusively from the Macabeo grape variety. This wine comes from vineyards situated at 730 meters above sea level in the Costers del Segre Denomination of Origin in Catalonia. Its production is very limited and follows ancestral winemaking methods involving skin contact, giving it a modern and distinctive character. During its production, the wine rests for 6 months in a 3,200-liter French oak fudre, without the addition of sulfites, which preserves the purity and authenticity of the terroir. This traditional process not only adds structure and complexity but also highlights its organoleptic qualities. Upon tasting, the wine shows a golden color with amber reflections and may present natural sediment. On the nose, it is complex and changing, featuring notes of white flowers like orange blossom, white fruits like pear, and a background of citrus and fresh herbs, along with subtle oxidative nuances and salty touches. On the palate, it presents a voluminous texture, light tannins derived from the skin, and good acidity that balances the whole, culminating in a long finish with notes of ripe fruit and soft spices. This wine is particularly ideal for pairing with fatty fish, seafood, aged cheeses, and dishes with subtle spices, providing a pleasant gastronomic experience.
