Kuzu is the wonderful root of the Pueraria lobata plant. Wonderful for its qualities and because it is one of the largest roots in the world. Kuzu is used in cooking to thicken soups or sauces, it dissolves in cold water and is added to the cooking with the rest of the ingredients. Stirring occasionally will thicken it. 5 grams provide 17 calories and are equivalent to 15 grams of cornstarch.
