Also known as the "King of mushrooms," Shiitake has traditionally been used in the East to enhance the immune response, promote longevity, and maintain psychophysical health and well-being.

Shiitake is rich in bioactive molecules, micro and macronutrients, minerals, amino acids, vitamins, enzymes, fibers, and secondary metabolites. Among the amino acids, there are good amounts of glutamic acid, also known as "brain food," which promotes the production of neurotransmitters and potassium transport in the brain. It contains high levels of polysaccharides such as beta-glucans, including Lentinan, a branched beta-glucan (β 1-3 β 1-6) that has shown significant immunomodulatory properties. A particularly effective substance contained in Shiitake is eritadenine, considered the most important bioactive component responsible for reducing cholesterol levels.
