Even though it is originally from Cáceres, this olive tree has adapted perfectly to our land and climatic conditions. It has given us olive juice that we surely will not confuse with other varieties, as it has very unique characteristics.
Delicate and smooth in structure, it is balanced between bitterness and spiciness. It is an extra virgin olive oil especially recommended for those who like to find a fruity aroma and intensity and persistence in the mouth.
Cold extraction before 6 hours from harvesting.
The Casas de Hualdo mill, surrounded by its olive trees, has been built within the estate itself. The olives, harvested directly from the tree, arrive still alive at the mill. There they are treated with dedication to be ground at the moment, avoiding any fermentation. All processes, from reception to packaging, have the most modern technology and have been carefully designed to extract the best from the olive, unlike other models where the exhaustion of the olive paste prevailed.
The Tajo River basin, as it passes through the province of Toledo, draws a staggered and very typical aesthetic that on its southern slope climbs from the meadows to the plains of the mountains. Carpio del Tajo. On a slightly undulating topography that reaches up to 600 m in altitude, our olive groves are located. The climate is harsh, combining cold winters with extremely hot dry summers, which favors the natural control of diseases and pests.
In autumn, temperatures drop considerably, although without freezing, guaranteeing unbeatable conditions at the time of harvesting.

Aromas: When smelling it, we discover an intense and penetrating oil, with a green fruity aroma with a predominance of green tomato and hints of chicory and basil.

Palate: In the mouth, its taste is fine and delicate, with balanced bitterness and spiciness. Green aromas stand out, as it contains a huge amount of polyphenols. The aromas of grass and green tomato are the most notable.
