Oro del Desierto Lechín 500ml is an organic extra virgin olive oil of limited production, made exclusively with Lechín de Granada olives harvested at early ripening in the El Vicario, Sierra Bermeja and El Cortijillo de las Pencas estates, located in the Desierto de Tabernas (Almería). The olive groves are traditional, with trees between 80 and 250 years old, some in drip irrigation and others in dry farming.

Making

  • Harvesting: mid-November.
  • Cold extraction:, 2 phases, only with medium ripening olives (50% green).
  • Variety: Lechín de Granada.
  • Zone: Finca El Vicario, Sierra Bermeja and Cortijillo de las Pencas, Desierto de Tabernas (Almería).

Tasting notes

  • Colour/Appearance: yellow-golden, filtered and clean.
  • Perfume/Bouquet: medium-low fruity, with aromas of green olives, dried fruits and soft hints of apricot.
  • Flavour/Taste: Smooth and fruity, very balanced, with hints of olives and medium-ripe fruit. Almost no bitterness and light, pleasant and harmonious pungency.

Outstanding properties

A native variety of the southeast peninsular, unique and difficult to find as an organic single variety. Its polyphenol content ranges between 350 and 600 mg/kg, providing medium stability and a long shelf life thanks to early harvesting.

Food pairing

Ideal for salted fish such as anchovies, tomato salads, soups, white meat stews and desserts. Recommended for consumption raw or at very low temperature to enjoy all its organoleptic qualities
