Brandy Pettersen Signature XO is a Spanish brandy made in Andalusia , inspired by the style of the great brandies of Jerez. It is produced from Airén grapes and aged in sherry casks using the traditional criaderas and solera system , a method that adds depth and complexity to the distillate. This process gives rise to an XO (Extra Old) category brandy, an appellation associated with distillates of long maturation and high quality.
During its aging in barrels, the brandy develops an average of about ten years of aging , with the presence of much older brandies in the solera, which contributes to its aromatic richness and balanced character.On the nose there are notes of dried fruit, candied orange peel and soft nuances of caramel and dried fruits , accompanied by a delicate spicy background.
The palate is smooth, warm and well-structured , with a round profile with hints of dried fig, plum, toffee and mild spices , ending in a long, enveloping finish. It is an ideal brandy to enjoy on its own as a digestif after a meal , although it can also be used in classic cocktails or to accompany chocolate and dried fruit desserts.
