Its cultivation is conducted organically and biodynamically, aiming to faithfully express the vineyard’s character and its limestone soil.
The making of this sparkling wine exemplifies a philosophy of minimal intervention, with fermentation using native yeasts and a secondary fermentation in the bottle with must from the vineyard itself, without the addition of sulfites or other additives. This wine has an aging time of over five years on the lees, allowing it to develop notable complexity and very fine bubbles, being later disgorged by hand.
