Champagne Odyssée 319 Blanc de Blancs Brut Grand Cru is produced by the maison Odyssée 319, a project created by Olivier Bonville and Ferdinand Ruelle with the aim of exploring and showcasing some of the great terroirs of the Champagne region. This cuvée comes mainly from vineyards located in Avize , one of the villages classified as Grand Cru in the prestigious Côte des Blancs , an area renowned for its chalky soils and for producing some of the most refined and precise Chardonnay in Champagne.
The wine is made exclusively from Chardonnay , making it a classic Blanc de Blancs that clearly expresses the mineral character and elegance of this terroir. The grapes are carefully selected in the vineyard and vinified mainly in stainless steel tanks , which helps preserve the purity of the variety and the freshness of the wine. After fermentation, the champagne undergoes extended ageing on the lees , adding aromatic complexity, a creamy texture and a finer, more integrated mousse.
On the nose it shows delicate aromas of white and stone fruit, citrus and white flowers , accompanied by subtle mineral notes and light bakery nuances from its ageing. On the palate it is fresh, balanced and elegant , with vibrant acidity, a fine mousse and a long, persistent finish marked by the chalky character typical of the great Chardonnay wines of the Côte des Blancs.
It is an excellent champagne to enjoy as an aperitif or paired with oysters, seafood, white fish and delicate seafood-based dishes , where its freshness and elegance enhance the flavours of the sea.
