De La Riva El Notario Macharnudo 2021 interprets the historic wines of Jerez. Ramiro Ibáñez and Willy Pérez craft it exclusively from Palomino Fino grapes from the El Notario vineyard in the higher Macharnudo area. It is an unfortified white wine, presented in a 75 cl format, whose character stems from albariza, grape ripening, and biological aging. After hand-harvesting, the grapes receive a brief sun exposure of about six hours, are gently pressed, and ferment spontaneously in 600-liter casks. It then develops a veil of flor and undergoes a long static biological aging. Unlike a Fino, it is not fortified or placed in a solera: it preserves the identity of a single harvest and a single vineyard. On the nose, it presents chalk and albariza, bitter almond, lemon peel, bread notes, fine wood, and floral hints. On the palate, it's broad and textural, with vibrant acidity, salinity, minerality, and an extraordinarily long finish. Its gastronomic and aging potential pairs well with seafood, fish, salted dishes, rice, cured meats, and aged cheeses.
