Dominio del Pidio 2021 is an exceptional red wine belonging to the D.O. Ribera del Duero, produced by the winery Dominio del Pidio, founded by the Aragón brothers. This winery is located in a privileged spot in the historic underground cellar neighborhood from the 16th century in Quintana del Pidio, Burgos. Its production is based on respecting the winemaking tradition of the region and the nature surrounding its vineyards. This wine is primarily made from Tinto Fino grapes, representing 95% of the blend, complemented by a small percentage of Albillo Mayor. The grapes come from old vineyards situated at high altitudes, giving distinctive characteristics to the wine. Vinification occurs through spontaneous fermentation in cement tanks, employing traditional methods that honor the region's heritage. Once vinified, Dominio del Pidio 2021 undergoes aging for approximately 16 months in French oak barrels of various sizes. This aging process takes place in the ancient cellars about 18 meters underground, where the temperature remains consistently ideal throughout the year, ensuring optimal development of the wine. In tasting, it presents an expressive and elegant aromatic profile with notes of ripe red and black fruit, accompanied by floral, spicy, and balsamic nuances.
