Dominio del Pidio 2021 is a red wine from the D.O. Ribera del Duero produced by the Dominio del Pidio winery, a project of the Aragón brothers that recovers the winemaking tradition of the historic neighborhood of subway cellars of the sixteenth century in Quintana del Pidio (Burgos). It is made mainly with Tinto Fino (95%) accompanied by a small percentage of Albillo Mayor , from old vineyards located at high altitude and cultivated with the utmost respect for the vineyard and the environment.

Vinification is carried out with spontaneous fermentation in cement tanks , following traditional methods. The wine is then aged for approximately 16 months in French oak barrels of different sizes , aging in the historic subway cellars at a depth of 18 meters, where the temperature remains constant throughout the year.

The nose is expressive and elegant, with aromas of ripe red and black fruit, floral notes and spicy and balsamic nuances. The palate is fresh and balanced, with fine tannins, pleasant texture and a long finish combining fruit, minerality and elegant hints of aging. A Ribera del Duero of authentic character that faithfully reflects the origin and winemaking tradition of Quintana del Pidio.
