The harvest is meticulously carried out, ensuring the highest quality of the musts. Controlled fermentation in stainless steel tanks with native yeasts ensures the aromatic purity of the wine. Subsequently, biological aging for eight months under flor veil in jars provides complexity, before transferring to old Fino casks for another twelve months of maturation. On the nose, it offers a blend of ripe fruit and mineral notes evoking the albariza soils, while on the palate, its freshness and volume stand out, sustained by excellent acidity.
