Lacima 2020 is an exceptional wine from Dominio do Bibei, standing out in the prestigious Ribeira Sacra. Made from grapes from vineyards aged between 50 and 110 years, in soils of slate, granite, and schist, this wine reflects the heroic viticulture of the region. Its vinification process includes fermentation in open barrels and aging for 24 months in French oak barrels, followed by refinement in fudres and bottle, adding depth and elegance. On the nose, it unveils aromas of ripe red and black fruits, cassis, violets, and aromatic herbs, alongside spicy and balsamic notes. On the palate, it offers a balance between fine tannins and vibrant acidity, with notable minerality and a long, persistent finish. It is recommended to serve between 15 and 17 ºC, pairing well with red meats, game, poultry, mountain rice, mushrooms, and aged cheeses, maximizing its complexity and elegance.
