La Caprichosa Verdejo 2023 Magnum is one of the most unique wines from Palacio de Bornos, made exclusively from Verdejo grapes sourced from old vineyards in the areas of Rueda, Pollos, and La Seca. These vines, many over 30 years old, are planted in stony, low-fertility soils, yielding concentrated and characterful fruit. The winemaking process involves prolonged pre-fermentation maceration and slow, controlled fermentation, after which the wine remains for several months on fine lees, adding volume, complexity, and a creamy texture. This meticulous work allows for a more gastronomic and refined Verdejo while maintaining the freshness and varietal expression characteristic of the D.O. Rueda.
