Manzanilla Pasada Solear en Rama – Winter 2021 Seasonal Release is a special bottling produced by Barbadilloin Sanlúcar de Barrameda , one of the historic wineries of the Sherry region and a benchmark producer of Manzanilla. This cuvée comes from the well-known Solear solera , one of the most iconic in the house, from which selected older casks are chosen for limited seasonal releases.
The wine is made from Palomino Fino grapes grown in vineyards within the Sherry Triangle, planted on the distinctive albariza soils , rich in calcium carbonate and known for their ability to retain moisture and support balanced vine growth in the warm Andalusian climate.
Ageing takes place using the traditional criaderas and solera system under a flor yeast veil , a natural layer of yeast that protects the wine from oxidation while giving it its distinctive character. In the case of this manzanilla pasada , the ageing period is longer than that of a young manzanilla, resulting in greater aromatic complexity and depth while maintaining the characteristic biological ageing style of Sanlúcar.
As an “en rama” bottling, the wine is released with minimal filtration to preserve its natural character, allowing the full aromatic intensity and texture of the wine as it exists in the cask to be expressed.
On the nose it shows aromas of toasted almonds, yeast and bakery notes , accompanied by hints of dried nuts, herbs and the characteristic maritime salinity typical of Sanlúcar manzanillas. On the palate it is dry, complex and elegant , with pronounced salinity, depth and a long finish clearly influenced by the nearby Atlantic Ocean.
It pairs beautifully with Iberian ham, seafood, fried fish, sushi and savoury tapas , and is especially appealing to those seeking a more complex and gastronomic style of Manzanilla.
