El Pecado 2023 is a parcel red wine by Raúl Pérez, made alongside Adegas Guímaro in Ribeira Sacra. It is from the historic vineyard Capeliños, on the steep slopes of Amandi above the Sil river. Its vines are around a century old and primarily grow on slate in a terrain where the steep gradient influences viticultural work. The winemaking aims to preserve the vineyard's identity, using significant stems, and involves prolonged fermentation and maceration in wood, with aging for approximately 12–14 months in used French oak to avoid new wood dominating the Mencía profile. On the nose, it offers an Atlantic and mineral character: violets, red and dark fruits, plum, blueberries, herbs, balsamic notes, wet stone, iron, spices, and light smoky hints. On the palate, it combines vibrant acidity, juiciness, and elegance, with fine tannins and a long mineral finish. It can be served around 15–16 °C, preferably after a light aeration. Its freshness, structure, and minerality pair well with red meats, game, roasts, cold cuts, and rich stews.
