In our cellar in Toro, we aged our "Soberana" amontillado, which was completed with another very old one, the "Hindenburg" amontillado, from the soleras of the Conde de Aldana. D. Antonio Barbadillo Ambrossy exchanged ten butts of manzanilla for each one of this aged wine, so much age and it still maintains its finesse, with balanced complexity, sharp, dry and elegant. Ample and very dry on the palate, it recreates in us the saline memory of its distant biological ageing as a manzanilla, and we are seduced by the fine touches of noble woods of its singular bearing.
