Heather honey is a special honey harvested during the summer months in the beautiful coastal areas and lush forests of Galicia. Composed of over 45% heather pollen, this honey stands out for its intense flavor and is less sweet than traditional honeys, with a delicate bitterness at the end that makes it a unique experience. This variety is very rich in minerals, polyphenols, and flavonoids, giving it remarkable antioxidant properties. Honey extraction is done simply and with respect for the environment: after collecting the honeycombs, it is cold centrifuged, followed by a 15-day resting period in barrels before bottling and labeling.
