Artisan sheep cheeses (Madrid)

Family business dedicated to livestock farming and artisanal production of pure sheep cheese in Ciempozuelos, Madrid.

Specialized in the Assaf breed, with a herd of 1,000 mothers subject to strict health controls and natural feeding.

The high quality of the milk allows the production of high-quality raw milk cheese, complying with EU regulations.

The Assaf breed is a synthetic variant originating from Israel, improving the meat and milk production of the Awassi breed.
