The Amontillado Wine from Castillo Lustau Almacenista from the Grupo Luis Caballero, presents us this Amontillado Wine from D.O. Jerez (Spain) made from the grape variety 100% Palomino.
The amontillados of the Marco del Jerez are wines made with 100% Palomino grapes, which undergo a double aging process. First, a biological aging stage, under a veil of flor yeast, and subsequently, when the veil is lost, an oxidative aging stage begins. Due to concentration, after almost 20 years of aging, the alcohol content increases to exceed 20% vol. Lustau has been selecting exceptional wines from independent artisans for decades to bottle them just as they are from their original soleras.
Lustau Almacenista Amontillado del Castillo is a selection from a solera of 38 botas with an average age of 19 years from Antonio Caballero and nephews. In El Puerto de Santa María, Don Antonio Caballero managed the family business, especially dedicated to the production of brandy since 1870. In love with Jerez wines, at the end of the 19th century, he established small soleras for his private consumption. Already in the 1960s, Luis Caballero Noguera moved the most special soleras to a unique location, the Castillo de San Marcos, an emblematic building in the historic center of El Puerto de Santa María.
