Pío del Ramo presents us the Rosé Wine Bétola The Cat Wine from the Protected Designation of Origin Jumilla (Spain), made from 100% Monastrell grapes sourced from certified organic vineyards located on calcareous sandy-loam soils, low in organic matter, which are characteristic of the area and essential for expressing the natural freshness of the variety.
The vines are managed through double Royat cordon pruning, a system that allows for balanced production and improved grape quality, ensuring uniform ripening. Harvesting takes place in early September, at the optimal moment, with the aim of preserving the freshness, natural acidity, and fruity character of the wine.
In the winery, an 80% destemming is carried out, followed by direct pressing, which results in a clean and delicate must. After careful clarification, the must ferments at low temperature, preserving the primary aromas of Monastrell and achieving an elegant and expressive aromatic profile.
Once alcoholic fermentation is complete, the wine remains three months on its fine lees, a process that adds greater creaminess, volume on the palate, and aromatic complexity, without losing freshness. This work on the lees is key to giving the rosé structure and a silky texture, distinguishing it from lighter rosés.
