The vineyard is located at 1,095 meters above sea level, where alluvial soils —composed of 80% sand, 10% clay, and 10% silt, with large stones at depth— provide a unique minerality to the wine. The pergola training system and surface irrigation by furrow contribute to the perfect vine development.
The production of Red Wine El Legado Cabernet Franc Los Bisole begins with a hand harvest in 18-kilo boxes, selecting only healthy and leaf-free clusters. At this stage, two types of non-conventional yeasts are incorporated, Torulaspora Delbruekii and Metschnikowia Pulcherrima, allowing for a cleaner and controlled fermentation, avoiding excessive use of sulfites and preserving varietal purity.
The fermentation takes place in stainless steel tanks, with a pre-fermentative maceration at low temperature, extracting the maximum aromatic and structural potential of the Cabernet Franc. Once fermentation activity has begun, it is inoculated with Saccharomyces cerevisiae (Uvaferm 43). Movements during fermentation are gentle, with punch-downs and pump-overs as needed, resulting in an elegant and expressive wine.
After completing malolactic fermentation, the wine is cold stabilized, filtered, and bottled, without going through wood, to maintain the freshness and authenticity of the varietal.
