This exquisite sparkling wine is made 100% from grapes, 90% Macabeo and 10% Chardonnay, sourced from selected vineyards in the Valencian Highlands. The confluence of Mediterranean and continental climates, along with its north-facing clay soil, allows the grapes to reach perfect ripeness, resulting in a flavor profile with smooth acidity and rich fruity character. The first fermentation occurs at low temperatures, between 13 and 14 ºC, to preserve freshness and varietal aromas. Then, tirage is carried out in late November, where the second fermentation takes place in the bottle, in an underground cellar with a constant temperature of 16 ºC. This cava rests for 9 months, optimizing its organoleptic properties. When served, it is recommended to have it between 4 and 5 ºC to enjoy its fullness.
