Caballito Cerrero Blanco is an agave distillate from Mexico, specifically from the region of the Highlands of Jalisco. It is a high-quality beverage produced artisanally using traditional techniques and carefully selected raw materials. This drink is made from Chato maguey, a type of Agave Angustifolia, which takes 8 to 12 years to mature properly. The process begins with cooking the agave in a stone oven, followed by crushing and fermentation in wooden tubs, before being distilled twice in copper stills to ensure its purity. The result is a distillate with a smooth, fresh, and complex flavor, with notes of cooked agave, anise, mandarin, honey, and vanilla. It can be enjoyed neat or in cocktails, ideally accompanied by lime and worm salt to enhance its uniqueness. As a very versatile option, it also mixes excellently with juices or sodas.
