The Vino Fino Pavon ages in the cellars of Luis Caballero in El Puerto de Santa María applying the traditional system of criaderas and soleras. Thanks to this, we find a wine with a clear marine influence and a very fresh and sharp profile, making it ideal to accompany a meal from start to finish.

The history of Lustau:
Lustau was founded by José Ruiz-Berdejo, a judicial secretary, in 1896. It was his son-in-law, Emilio Lustau Ortega, who moved the winery to the Jerez neighborhood of Santiago.
In 1950 Lustau began selling its wines under its own brand. The winery continued to expand and increase its popularity. Under the direction of Rafael Bolao, they began to combine tradition in the production of their wines and innovation in their work methods.
In 1988, the characteristic high-necked bottle with sloping shoulders was designed in which they would later sell their wines. In that same year, the winery was sold to Caballero, who at that time produced liqueurs and spirits. Thanks to the economic growth that this sale brought, the winery was able to acquire new vineyards in the Jerez region.
In recent years, the winery has been awarded numerous times. Among their recognitions are the title of Most Awarded Spanish Winery (and seventh worldwide) in 2012 and 2015, and Best Jerez Winery in 2014.
