Making :
Grapes from vines over 60 years old combining slate, clay and granite soils. Selection on the table with total destemming and gentle crushing. Vatting and cold pre-fermentation maceration. Spontaneous alcoholic fermentation with indigenous yeast for 12-13 days at a controlled low temperature (maximum 20ºC). After devatting and light pressing, it undergoes malolactic fermentation in stainless steel tanks with selected lactic bacteria in four weeks for subsequent aging for 11 months in French (50%) and American (50%) oak barrels, combining medium and light toasting.
