Palo Cortado Leonor is made exclusively from Palomino Fino grapes and holds the prestigious D.O. Jerez. This winery, González Byass, founded in 1835, cultivates 1,844 hectares of vineyards in Spain. The harvest, carried out in the welcoming 'Marco de Jerez,' allows the grapes to be exposed to ideal weather conditions, promoting abundant production. The grapes are gently pressed to obtain the most delicate and elegant 'mosto yema.' The wine then undergoes fermentation, classification, and fortification before entering the solera, where it rests for about 12 years in American oak casks. This long maturation allows the wine to acquire a unique flavor through controlled oxidation. The result is an intense and refined Palo Cortado wine with a flavor profile that includes notes of dried fruits and old wood, perfect for pairing with meals or enjoying alone.
