Nordés Gin, created in 2012, results from the collaboration of a sommelier, a winemaker, and a master distiller. This Galician elixir begins with a slow distillation of Albariño wine, which is blended with 14 botanicals and one seaweed, distinctive ingredients from Galicia. Its predominant flavors include Laurel, Caralleira, Toxo, Salicornia Marina, Lemon Verbena, Juniper, Licorice, Cardamom, Mint, Ginger, Tea, Lemon Peel, Quinine, Sage, and Media Sonrisa de Gato. The complexity of its production lies in the three separate distillations of each ingredient in a still, followed by a fourth distillation that combines them all. Its macerations are done in harmony with biodynamic rhythms, utilizing lunar phases. Ideal for enjoying neat due to its perfumed character, Nordés Gin can also be mixed with tonic and ice, and is recommended to be scented with grape carpaccio.
