Pacharan Etxeko La Navarra is made based on the traditional recipe of the Belasco family but a less sweet blend is achieved than other pacharanes, this is due to the low percentage of sugar in the aniseed in the blend.
The sloes come from Navarre plantations controlled by the Regulatory Council of Pacharón Navarro and the alcohol comes from beet weeds; these two ingredients are macerated with anise and depending on how the fruit evolves with the alcohol (color and flavor) is gradually adding the anise sugar which is the one that provides density that balances the astringent characteristic of fruit , having to filter the resulting mixture to separate impurities.
The sloes are harvested after the summer, during the first days of autumn, its appearance to be selected must be clean, bright and with a bluish black color.
