The Clos Systey Saint-Émilion Grand Cru is made from an exquisite blend of Merlot, Cabernet Sauvignon, and Cabernet Franc. The 2015 harvest benefited from warm and dry weather in the months of May, June, and July, allowing for a perfect balance in grape maturation. With a cooler and wetter August, the vines achieved optimal development, ensuring an exceptional harvest with healthy and ripe grapes.
The terroir where this wine is cultivated is composed of sandy-loamy soil with iron presence in the subsoil, giving it great minerality. In addition, the vineyard is managed in a sustainable and ecological way, without the use of pesticides, herbicides, or chemical fertilizers. To enrich the soil and promote biodiversity, green manures and melliferous plants are planted.
The harvest is done manually, with a strict selection of clusters before fermentation. The grapes ferment with native yeasts, without excessive extractions and at controlled temperatures (25º-26º), allowing the aromas to infuse gradually. Subsequently, malolactic fermentation takes place and the wine ages for 18 months, of which 30% goes through new barrels of fine-grain oak with medium or light toasting.
