Hand-harvested grapes. Transported to the winery in 300kg crates. Gentle destemming. Fermentation in stainless steel tanks, with temperature and frequency of pump-overs controlled automatically. It undergoes 3 months of aging in 225-liter American oak barrels, and another 3 months in the bottle before being released to the market.
