The Vino Tinto Castelo Nouveau is produced by Bodega Castelo de Medina and falls within the I.G.P. Vinos de la Tierra de Castilla y León designation. It is made exclusively from Tempranillo grapes sourced from Finca La Garbancera in Villaverde de Medina, Valladolid. This estate, with its sandy loam soils, imparts a defined aromatic profile to the wine. The semi-carbonic maceration method used in its production helps retain the unique freshness and fruity aromas, supervised by winemaker Sara Román de la Calle. The process includes a two-phase fermentation that highlights the wine's characteristics. The final product is rounded in the bottle for at least a month, resulting in a young wine with great aromatic expression and balance. Its intense cherry color with violet reflections is accompanied by aromas of berries and flowers, a harmonious taste in the mouth, and excellent acidity, making it perfect to pair with appetizers and light dishes.
