The 'Vino Tinto Poco Rosa', produced by the Garganta Organista winery, comes from a unique vineyard in San Esteban del Valle, Ávila. This wine is made from 70-year-old garnacha tinta vines, giving it outstanding richness and complexity. The 2021 vintage benefited from a cool summer, marked by a brief heatwave and some rain in early September, allowing for proper grape ripening. Harvesting was conducted following biodynamic principles on a waning moon day, ensuring careful selection of the grapes, which were collected in 17 kg boxes. In the winery, the vinification process includes complete destemming and 70% crushing, with natural fermentation using indigenous yeasts. This wine has not undergone barrel aging, but its one-year bottle maturation has allowed it to develop all its complexity and elegance. On tasting, characteristic aromas of cherries and lavender can be appreciated, along with floral notes and red fruits that make it memorable. Although it may present some tartrates at the bottom due to its naturalness, this does not affect its quality. Ideal for enjoying alone or in the company of a good dish.
