The 'Vino Tinto Tierra Rubia' represents the winemaking tradition of the D.O. Mondejar. Made from Syrah grapes grown on vines over 20 years old, it thrives in a temperate Mediterranean climate on red soils with clayey sediments. This environment provides excellent permeability and aeration for the vines. The wine benefits from a cold cryomaceration at 7ºC, followed by controlled fermentation in concrete tanks and malolactic fermentation in oak barrels. These techniques ensure high aromatic concentration and perfect tannin dissolution. It has a bright color with cherry and violet tones. On the nose, it is intense and complex, with floral and red fruit aromas. On the palate, it is full, silky, with excellent structure thanks to its 3 months of aging and an alcohol content of 13.5%. Perfect to pair with red meats and aged cheeses.
