Waterford Single Malt Organic Gaia 1.1 Whisky: The first whisky from Ireland distilled from certified organic Irish barley is the Waterford Organic Gaia 1.1 whisky. Hence the name Gaia, the ancient neopagan goddess, a personification of Mother Earth herself, honoring our creation.

For this whisky, the Ouverture variety was used with Mauri distillery yeast during a fermentation period of 136 hours. The whisky matures in barrels for a total of 3 years, 9 months, and 20 days. Additionally, it is a limited edition distillate.
