The Waterford distillery today boasts a technological marvel called the Facilitator, which allows for the creation of elite whisky. Keeping the harvest from each farm clearly separated and treated equally as it transforms from grain to liquor.
State-of-the-art equipment combines with ancient knowledge of local Irish barley, with extended fermentations of 120 hours, and a leisurely distillation with an exceptional oak spectrum. This way, the maximum expression of the terroir can be revealed, farm by farm, harvest by harvest. Unique distillates, new starting points that lead to fascinating expressions of Terroir, for their transformation in the barrels.
Waterford Single Malt Organic Gaia 1.1 Whisky: The first whisky from Ireland distilled from certified organic Irish barley is the Waterford Organic Gaia 1.1 whisky. Hence the name Gaia, the ancient neopagan goddess, a personification of Mother Earth herself, honoring our creation.
For this whisky, the Ouverture variety was used with Mauri distillery yeast during a fermentation period of 136 hours. The whisky matures in barrels for a total of 3 years, 9 months, and 20 days. Additionally, it is a limited edition distillate.
