The White Wine Equilibrio Sauvignon Blanc from Bodega Sierra Norte presents this D.O. Jumilla (Spain) White Wine, made from 100% Sauvignon Blanc grapes.
The vineyards are located in the La Raja/Casa del Olmo area, at an altitude of 600m. They are planted in brown and limestone soils, with poor organic matter and low salinity, and good aeration due to their sandy-loam texture. Thus, they are under a continental climate with Mediterranean influence. The age of the vineyards is 16 years, with a Cordon training system.
The wine comes from vineyards cultivated using organic farming, based on respect, sustainability, and balance. This 100% Sauvignon Blanc variety results in an organic and vegan wine. The soils play a key role due to their activity and positive biological conditions that favor the rapid assimilation of organic matter, promoting the wine's full expression.
It was awarded the Silver Medal by The Drink Business Magazine for the 2019 vintage.
The harvest begins in the first week of September, taking place at night to minimize oxidation of the must and preserve the most delicate aromatic nuances. Once the grapes are harvested, a static clarification is performed, the clean must is transferred, and fermentation is carried out at a controlled temperature to achieve its best aromatic expression. Once fermentation is complete, the wine is transferred and kept with its fine lees, thus protecting it from oxidation and adding greater volume and smoothness to the wine. The processes of clarification, stabilization, and filtration of the wines before bottling are carried out in the most respectful manner possible, to preserve their character to the fullest.
