Olimarum White Wine is a pure expression of elegance, tradition, and dedication. This wine is made 100% from Albillo Mayor, an indigenous variety known for its nobility. The vineyards are located at 825 meters altitude, allowing the climate and height to impart unparalleled freshness and complexity to the grape. Respect for traditional viticulture is evident in every step: grapes are hand-picked in 16 kg boxes, and each bunch is carefully selected. After destemming, the grapes are gently pressed and the must is transferred to 225-liter French oak barrels for alcoholic fermentation. This phase is complemented by a unique aging process where 20% of the wine is moved to glass demijohns, allowing gradual evolution, while the remaining 80% remains in barrels, undergoing periodic batonnage that adds creaminess, structure, and volume to the wine. The result is a drink full of nuances: white fruit, floral notes, and subtle minerality combine in a fresh, elegant, and persistent mouthfeel.
