The White Wine Pazo Señorans Collection from Bodega Pazo Señorans, presents us with this white wine from the Rías Baixas D.O., made from 100% Albariño grape varieties.
Elaboration: Manual harvest in boxes, grape selection in the vineyard and in the winery. Skin maceration in a press. Traditional fermentation in a virgin at a controlled temperature of 16ºC. Aging for a minimum of 5 months on fine lees in stainless steel tanks. Bottle aging for approximately 30 months.
Recommended serving temperature: Between 7 and 10ºC.
Pazo Señorans, now converted into a winery, is a magnificent representation of the manor houses of the 16th century, built in the countryside with all the charm and nobility of past eras.
The winery released its first vintage in 1989.
The vineyard is entirely of the native Albariño variety. It is characterized by the use of the trellis as a conductive system, and also by being located in different locations, but all within a radius of about 10 km, and close to the sea.
The terrain configuration is not disparate, but very special; it is mainly ‘xabre’ soils, resulting from the decomposition of granite rock and with great drainage capacity.
The climatic characteristics of the environment, combined with the soil morphology (poor, acidic, sandy, and thin) give the grapes their own characteristics of aroma and freshness.
This valley constitutes the most representative subzone of Rías Baixas, where the largest area of vineyards and wineries is concentrated: more than 2300 hectares, representing 57% of the entire Denomination of Origin.
