The White Wine Son D Sol, produced by Bodegas Marisol Rubio in the Tierra de Castilla, Spain, is made from Pedro Ximénez grapes. This wine is characterized by fermentation in concrete tanks in Villanueva De Alcardete, Toledo. The unique calcium-rich soil helps protect the grapes from biotic factors. During the 2020 campaign, the grapes overcame weather challenges, highlighting the resilience and quality of the variety. This wine was bottled in early June 2021. With its characteristic acidity and low pH, the White Wine Son D Sol achieves full phenolic maturity without a high alcohol level, which does not exceed 14 degrees in the warmer years. Its freshness makes it perfect for enjoying with snacks, crudités with mayonnaise, lightly aged cheeses, sushi, salads, or a delicious vegetable wok. It is recommended to serve it between 5º - 7ºC to fully appreciate its complex aromas and textures. This clear and bright wine presents a straw yellow color with pale gold reflections, capturing the essence of youth and freshness in every glass.
