Pío del Ramo presents us with the Mediterranean White Verdejo Wine from the Jumilla Protected Designation of Origin (Spain), made from 100% Verdejo grapes, a unique interpretation of this variety in a clearly Mediterranean environment. The vineyards are situated on calcareous and sandy soils, low in organic matter, which promotes balanced vine growth and excellent aromatic concentration.
The vines are trained in a two-arm trellis system, allowing for optimal sun exposure and proper bunch aeration, key aspects for achieving healthy, quality grapes. When the grapes reach their optimal ripeness at the end of summer, harvesting is done early in the morning, taking advantage of cooler temperatures to preserve primary aromas and avoid unwanted oxidation during transport to the winery.
The winemaking process is carried out with special care to respect the varietal identity of Verdejo. Once in the winery, the grapes are processed gently, and fermentation takes place in temperature-controlled stainless steel tanks, allowing the preservation of all the freshness, herbaceous aromas, and fruity nuances characteristic of the variety. Subsequently, the wine is aged for three months on its fine lees, which adds greater volume, creaminess, and complexity on the palate without losing its fresh character.
The result is a balanced, expressive white wine with a very defined personality, combining the essence of Verdejo with the influence of the Mediterranean climate of Jumilla. In the glass, it presents a pale yellow color with greenish reflections, clean and bright. On the nose, aromas of white fruit, citrus, and herbaceous notes stand out, accompanied by a subtle floral background. On the palate, it is fresh, flavorful, and enveloping, with good acidity, a silky texture, and a persistent, pleasant finish.
